In the West Country the Monday before Ash Wednesday was called Shrove Monday, and peas and pork were eaten on it as surely as pancakes on Shrove Tuesday. A correspondent signing W. S. added the note as a postscript to a letter to Hone, setting the dish beside the salt fish of Ash Wednesday as one of the fixed meals of the season.
