On St Simon and St Jude’s Day a girl pared an apple whole, took the paring in her right hand and, standing in the middle of the room, said a rhyme to the two saints. She then turned round three times and threw the paring over her left shoulder, where it was to form the first letter of her future husband’s surname. If it broke into pieces and made no letter she would never marry. The pips of the same apple were then put into spring water and drunk, though Ellis’s informant gave no reason for that.
