Broughton for St Thomas’s night

21 December · Northumberland

No longer kept

On St Thomas’s night the old Northumbrian dish of broughton came out again, as it did on Midsummer Eve. It was a pair of cakes with cheese baked in the middle, cut in squares and eaten with melted butter and sugar. Brockett noted it on the word of a woman of 99.

It is a repast on Midsummer eve, and also on Saint Thomas' night.
