Eggs were the dish for the Saturday before Shrove Sunday, the first of a run of set foods for the days leading into Lent. Denham’s list followed it with ham or bacon collops on Shrove Monday and pancakes on Shrove Tuesday. It ended with salmon and all kinds of fish in Lent.
