Dugdale records that the gentlemen of Gray’s Inn who came to breakfast on Easter Day, after the service and communion, were given eggs and green sauce. The dish had been provided at the chief cook’s cost, like the Good Friday dinner, until an agreement of 1581 put both on the house. Brand prints it among the eggs and herbs that were blessed and eaten at Easter once the Lenten fast was over.
