Bull beef at Candlemas

Bull beef was the proper meat for Candlemas in Denham’s list of certain dishes for certain times. The same list gave a gammon of bacon at Easter, a goose at Michaelmas and a roast pig on St Bartholomew’s Day. Pullets were in season all through January.
