Stying the boar for Hallowtide brawn

At Michaelmas the boar was shut up in his sty to fatten for brawn, ready for killing at Hallowtide. Tusser said the sooner it was done the better, and that he made better brawn if he lay hard. Brawn went on to be one of the dishes of the farmer’s Christmas.

At Mihelmas safely go stie vp thy Bore, / least straying abrode, ye doo see him no more: / The sooner the better for Halontide nie, / and better he brawneth if hard he doo lie.
