At Baldock in Hertfordshire the children looked forward to Shrove Tuesday long beforehand and called it Dough-nut Day. It was the custom to make a good store of small cakes fried in hog’s lard in a brass skillet over the fire, called dough-nuts, and the young ones were plentifully fed with them. Ellis added the note to Brand, beside a Dorset shroving rhyme begging for pancakes.
