A giblet pie at Christmas in Newcastle

25 December · Newcastle upon Tyne, Northumberland

No longer kept

In Newcastle almost every household, however poor, had a giblet pie at Christmas. Brockett noted that the town called the parts taken from a single goose a pair of giblets.

In Newcastle they call what is taken from one goose, a pair of giblets. At Christmas, hardly any person, however poor, is without a giblet pie.
